It snowed Monday in Barcelona, I went out to take pictures of my neighborhood in the snow. Here there is no memory of the cold. Beat the egg whites until stiff with a pinch of salt. When they are firm, add sugar without stopping beating. Cook 1 minute or 2 whites in a large saucepan of boiling water.
Remove white using a slotted spoon.
Mount floating islands in individual cups. Naper caramel.
