Chapchae Aztec Tortilla Soup
9 years, I am a client of a Korean restaurant in Barcelona. It pays no mine but the food is delicious and the family atmosphere. Mr. Lee always welcomes us with outstretched hand and looked happy to see us. One day he talks about his family, he introduces us to his wife in the kitchen, he takes us through an apartment he rented, he tells us his passion for mountain and road trips. Gradually we learn about the different dishes: kimchi (the most famous is fermented cabbage), Kimbap (model copied by the Japanese maki sushi), bibimpap (mixture of rice, meat and vegetables ) chapchae (transparent spaghetti) yukhoe (beef tartare)
... In January I returned to Mr. Lee. At the end of meal, it took me two hands, a strong and tight and his eyes filled with tears, he told me that his wife had died of lung cancer by storm.
Ingredients: 150g beef
for the marinade: 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 teaspoon sugar ½ teaspoon mirin
150 g sweet potato noodles (dang myon)
4 shiitake (mushrooms or possibly Paris)
3 small carrots, cut into julienne
10 g mushroom black (dried)
1 green pepper cut in julienne 200 g spinach
1 tablespoon vegetable oil coffee seeds 1 tsp sesame
tablespoon soy sauce ½ c. Coffee Sugar
qq drops of sesame oil 1 clove garlic
passed in a garlic press 1 onion
Cut beef into thin strips and marinate in 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 teaspoon sugar, ½ teaspoon mirin. Soak
in hot black mushrooms for 20 minutes to rehydrate. Repeat for the shiitakes, discard stems.
Julienne carrots, green pepper, onion, garlic, mushrooms, spinach.
Bake in a light vegetable oil, all vegetables separately, to help limit their own flavor.

Drain the pasta, which have become translucent. Pour into a serving bowl and toss with the vegetables. A joust few drops of sesame oil. Serve.
